Coriander has a bitter, hot taste (rasa) and balances all three doshas, particularly Pitta. Ayurveda states it has a strengthening, balancing quality for the whole body. It promotes the Agnis (digestive fires), without increasing Pitta.

Goes well with curry dishes, chutneys, dhals and bread.
