Cinnamon has a hot, sweet, astringent ayurvedic taste. It is used frequently used in pastry, sweet foods and spice teas. If cooked for too long it becomes bitter.

Only slight traces of cumarin, which may be unhealthy, are found in Ceylon Cinnamon.
