This spice mixture is specially prepared for dhal and cabbage dishes. It reduces their flatulence creating properties and makes them more easily digested. The slightly bitter taste of fenugreek is softened by roasting in ghee (clarified butter). Asafoetida loses its strong smell when cooked.
